Brownies, Cookies, and Pumpkin Pie-Oh My!

This weekend is another bake sale weekend! Wahoo!

I'm hoping not to be in the kitchen all weekend long like last month. ;)

This month I took pre-orders only since I was booked with orders from my other business. I have missed baking though. I can only go so long before I need to bake something!

Fall Soups

As the weather begins to cool I find myself wanting some of my favorite fall soups. Here are 2 traditional favorites and one that I made up on a whim.

Sopita~A family recipe

When I met my husband his family taught me this recipe. When I first had it I was amazed. It was like macaroni and cheese, but in a soup. It is now one of my favorites.

The picture above shows the browning of the noodles.

After making a tomato broth and mixing it into the noodles, it's time to add the cheese. You can also put cilantro in around the same time you add the cheese.

Add a little salt and pepper to taste and it's ready to serve. It's warm comfort in a bowl.

Potato Soup in Tomato Broth

This is another family favorite. It has been past down to me, and every fall I have to make it. I start with cubing the potatoes and washing the cilantro.

While the potatoes are cooking in the tomato broth I cube some Tillamook cheese.

After adding in the cilantro and cubed cheese this dish is ready. Salt and pepper to taste are the finishing touches to a perfect fall soup.

Chicken & Heirloom Tomato Soup


One day we were at Sprouts and I saw these beautiful heirloom tomatoes. I picked them up and knew I was going to make a soup out of them. Though my husband hates tomatoes he was kind enough to allow me to experiment anyway while he fixed something else for dinner. :)

I sauteed mushrooms in olive oil and herbs.

I wanted to have large pieces of my heirloom tomatoes so I cut them thick.

I created a tomato broth and let it simmer. It smelled so good and just being over the stove warmed me right up.

After mixing together the mushrooms, tomatoes, and herbs this dish could be served at this point, but I wanted to add some chicken.

Hearty and healthy this dish came out perfectly. My husband tried it and even said it was good. Considering he hates tomatoes-that was a huge compliment!

All that was left to do was to sprinkle some cheese on top, serve, and enjoy.

And I did.

Healthy Cookies~Say What?

You heard me-healthy cookies that yes-taste good!

I had them yesterday. Andy's mom had us over and made her amazing double chocolate bran cookies. They are full of healthy fiber and guess what-taste amazing!!!!

They are just the perfect amount of chocolate and not too rich.

I'm hoping to offer them in my November bake sale. It will be nice to have a tasty healthier item on my menu.

Good Morning

I had the best dream. I woke up happy, and looking forward to November's bake sale. In my dream I was making the most scrumptious apple crumble pie. I cut the apples, added the spices, and watched my master piece slowly bake.

When I took my pie out it was perfection. Hopefully this dream is a projection of the wonderfully delicious things I'm going to get to bake next month. :)

The story of 246 Brownies

2 days, 48 eggs, and 246 brownies later---

I am happy to report the brownie bake sale was a huge success.

Ah my kitchen. My sanctuary.

I'm the type that has to have everything cleaned before I can bake. So first order of business was to clean the kitchen.

I have the kitchen decorated for Halloween.

My husband Andy was nice enough to put together Mr. Potato head for me. ;)

I love Halloween!

I took this picture before starting my 2nd day of baking. I really felt in my element.

I like having everything organized and ready before I bake.

If only life were as easy as organizing ingredients and baking utensils-sigh.

For the walnut brownies my husband tried out two different chopping methods.

After much excitement in the test kitchen, and long hours by my husband having to taste-test, I completed my new Halloween brownies.

Made with pumpkin spice these are sure to be a fall favorite.
I'll be offering these through the holidays.







Ah---the finished product of my labor.

They came out so chocolaty and gooey.

They go great with a Starbucks pumpkin spice latte' or some milk.

Monday morning came too quickly. It was time to pack up my babies and deliver them.

Off they go. Bring joy and love to those who eat you my babies. <3

Chocolate Chip Cookies

~My Secret Love~

I love baking chocolate chip cookies. I'm hoping to sell these in November. I'm trying a few fun things out in my test kitchen. Who knows-we may have a fall favorite on our hands!
